In a large pot, heat 2 tablespoons of butter over medium heat. Add 500 grams of chicken breast, cut into bite-sized pieces, and brown on all sides for about 5 minutes.
Add 1 diced bell pepper and 1 diced carrot to the pot, cooking for an additional 5 minutes until the vegetables begin to soften.
Stir in 0.5 cup of peanut butter, 1 can of diced tomatoes (400 grams), 2 cups of water, and 1 teaspoon of cumin. Bring the mixture to a simmer.
Reduce the heat to low, cover, and let the stew cook for 30 minutes. Stir occasionally and add salt to taste.
