Preheat the oven to 375°F (190°C).
In a large ovenproof skillet, heat olive oil over medium heat. Add the onion and garlic, sauté for about 5 minutes until softened.
Stir in the mixed vegetables and cook for another 5 minutes.
Add the leftover turkey and gravy to the skillet, stirring to combine. Cook for an additional 5 minutes until everything is heated through. Season with salt and pepper.
Spread the turkey and vegetable mixture evenly in the skillet or transfer to a baking dish if preferred.
Top with an even layer of mashed sweet potatoes.
Sprinkle the cheddar cheese over the mashed sweet potato layer.
Bake in the preheated oven for 20-25 minutes until the cheese is melted and golden brown.
