A quick and easy stir-fry featuring tofu, fresh broccoli, and bell peppers, seasoned with simple spices for a delicious plant-based meal.

Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
Heat a large skillet or wok over high heat and add 2 tablespoons of oil. Once hot, add the tofu cubes and stir-fry until golden brown, about 5-7 minutes.
Add the broccoli florets and sliced bell peppers to the skillet. Stir-fry for another 5 minutes, until the vegetables are crisp-tender.
Season with 1 teaspoon of salt, 0.5 teaspoons of black pepper, and 1 tablespoon of soy sauce (if available). Stir well to combine.
Serve the stir-fry over steamed rice and garnish with chopped scallions and sesame seeds if desired.
