Cook the Asian noodles according to package instructions, then drain and set aside.
In a large pan, heat 1 tablespoon of oil over medium heat. Add the cubed tofu and cook until golden and crispy, about 8 minutes. Remove from the pan and set aside.
In the same pan, add peanut butter, almond milk, soy sauce, and chili powder. Stir until smooth and heated through, then add the cooked noodles and mix well.
Add the crispy tofu to the noodles and toss everything together. Garnish with chopped cilantro if desired and serve warm.
