Preheat your oven to 200 degrees Celsius.
In a bowl, mix 4 tablespoons of soy sauce, 2 tablespoons of mirin, and 1 tablespoon of sugar to create the teriyaki glaze.
Place the salmon fillets on a baking sheet lined with parchment paper, and brush each fillet with the teriyaki glaze.
Bake the salmon in the oven for about 15 minutes or until cooked through.
While the salmon is baking, cook 2 cups of brown rice according to package instructions.
In the last 5 minutes of cooking the rice, steam or sauté your choice of vegetables (e.g., broccoli or bell peppers) until tender.
Once everything is cooked, assemble the bowls by placing a scoop of brown rice at the bottom, followed by a piece of teriyaki salmon, and top with the vegetables.
Drizzle any remaining teriyaki glaze over the assembled bowls and serve immediately.
