In a small bowl, mix soy sauce, mirin, and sugar to create the teriyaki sauce.
In a medium pan, heat 1 tablespoon of oil over medium heat. Add chicken breast and cook until browned and cooked through, about 10-12 minutes. Remove from heat.
Pour the teriyaki sauce over the cooked chicken and simmer for an additional 3-5 minutes, until the sauce thickens slightly.
Meanwhile, cook basmati rice according to package instructions.
In another pan, sauté broccoli and bell peppers in 1 tablespoon of oil over medium heat until tender, about 5-7 minutes.
To assemble, divide the rice among four bowls, top with sliced teriyaki chicken, sautéed vegetables, and drizzle with any remaining teriyaki sauce.
