Preheat the oven to 180 degrees Celsius.
Cut the tops off the bell peppers and remove the seeds. Place them in a baking dish.
In a bowl, mix together the spinach, feta cheese, black pepper, and a pinch of salt.
Stuff each bell pepper with the spinach and feta mixture, pressing down gently to pack them in.
Drizzle the stuffed peppers with olive oil and cover the baking dish with foil.
