Cook the brown rice according to package instructions.
In a skillet, heat 1 tablespoon of butter over medium heat. Add diced chicken breast and season with cumin, chili powder, and salt. Cook until chicken is fully cooked, about 10-15 minutes.
In the last 5 minutes of cooking the chicken, add black beans and corn to the skillet to heat through.
Once the rice is cooked, assemble the bowls by placing a scoop of rice at the bottom, then add the chicken, black bean, and corn mixture on top.
Drizzle with lime juice and serve with chopped cilantro for garnish.
