Slice the beef ribeye steak into thin strips and season with salt, black pepper, and soy sauce. Let it marinate for 10 minutes.
Heat the sesame oil in a large pan or wok over medium-high heat. Add the sliced beef and cook until browned, about 5 minutes.
Remove the beef from the pan and set aside. In the same pan, add the sliced bell pepper, broccoli florets, and sliced carrots. Stir-fry for 5 minutes until the vegetables are tender-crisp.
Return the beef to the pan. Add the collagen powder, soy sauce, and a splash of water. Stir well to combine and cook for another 5 minutes.
Serve the beef stir-fry hot, garnished with sesame seeds and sliced green onions if desired.
