Slice the pork into thin strips and season with salt, pepper, and a pinch of cayenne pepper. Set aside.
Heat 2 tablespoons of butter in a large skillet over high heat. Add the pork strips and stir-fry for about 5 minutes until browned and cooked through. Remove from the skillet and set aside.
In the same skillet, add the broccoli and stir-fry for 3-4 minutes until bright green and crisp-tender. Add minced garlic and ginger, and stir-fry for an additional 1-2 minutes.
Return the pork to the skillet, combine with the broccoli, and add a splash of soy sauce. Stir everything together until well mixed and heated through.
Serve the stir-fry over steamed rice with a sprinkle of chopped scallions.
