In a large pot, heat 1 tablespoon of oil over medium heat. Add 400 grams of pork belly and cook until browned on all sides.
Pour in 4 cups of water along with 2 tablespoons of soy sauce, 1 tablespoon of mirin, 1 tablespoon of grated ginger, and a pinch of salt. Bring to a simmer and let it cook for 20 minutes.
In a separate pot, cook 300 grams of ramen noodles according to package instructions. Drain and set aside.
Once the broth is done, strain it to remove any solids and return it to the pot. Adjust seasoning if needed.
To serve, place a portion of cooked noodles in each bowl, ladle the hot broth over the noodles, and top with slices of cooked pork. Garnish with any additional toppings you prefer.
