In a large pot, combine 1.5 liters of water, 1 tablespoon of fish sauce, and 2 star anise. Bring to a simmer.
In a separate pan, char 1 sliced onion and 1 piece of ginger over medium heat until browned. Add to the pot.
Add 250 grams of sliced beef to the simmering broth. Cook for 5 minutes until just cooked through.
Remove the pot from heat and strain the broth to remove solids. Return the clear broth to the pot.
Prepare 200 grams of rice noodles according to package instructions. Drain and divide among serving bowls.
Ladle the hot broth over the noodles and top with sliced beef. Garnish with fresh herbs and lime wedges.
