Heat a large skillet over medium-high heat and add 1 tablespoon of butter.
Add the sliced bell peppers and onions to the skillet and sauté for about 5 minutes until softened. Remove from skillet and set aside.
In the same skillet, add the ground beef and cook until browned, breaking it apart with a spatula, about 6-8 minutes. Season with salt and black pepper to taste.
Return the sautéed bell peppers and onions to the skillet with the beef, mixing well. Top the mixture with cheddar cheese and cover the skillet until the cheese has melted, about 2-3 minutes.
While the cheese melts, toast the burger buns in a separate pan with remaining butter until golden brown.
Assemble the sandwiches by placing the beef and cheese mixture on the bottom half of each toasted bun, then close with the top half. Serve immediately.
