In a large skillet or wok, heat 1 tablespoon of oil over high heat. Add 500 grams of sliced pork and stir-fry until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.
In the same skillet, add 1 diced bell pepper, 1 cup of chopped broccoli, and 1 cup of shredded cabbage. Stir-fry the vegetables for about 5 minutes until they are tender but still crisp.
Return the cooked pork to the skillet. In a small bowl, mix 3 tablespoons of soy sauce, 1 tablespoon of ginger (minced), 2 cloves of garlic (minced), and 1 tablespoon of sesame oil. Pour the sauce over the pork and vegetables, stirring well to combine. Cook for an additional 2-3 minutes, then remove from heat.
Serve the Moo Shu Pork in butter lettuce leaves or wraps, garnished with chopped scallions and sesame seeds.
