Rinse the red lentils under cold water and drain.
In a medium pot, combine the red lentils and water, bring to a boil, reduce heat, and simmer for 15 minutes or until tender.
While the lentils are cooking, chop the bell peppers, zucchini, and red onion.
In a large skillet, heat olive oil over medium heat. Add the chopped vegetables, garlic, and cumin, and sauté for 5-6 minutes until vegetables are tender.
Prepare the tahini drizzle by mixing tahini, lemon juice, and water in a small bowl until smooth.
