A delicious Japanese beef bowl infused with the spicy and tangy flavors of kimchi, balanced by caramelized onions.

Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the sliced onions and cook until caramelized, about 15 minutes, stirring occasionally. Remove from skillet and set aside.
In the same skillet, add another 1 tablespoon of vegetable oil and increase the heat to medium-high. Add the beef slices and cook until browned, about 3-4 minutes.
Reduce the heat to medium, and add the soy sauce, mirin, and sake. Stir to combine and cook for another 2 minutes.
Add the kimchi to the skillet with the beef, stirring to combine. Cook for an additional 3 minutes, allowing the flavors to meld.
Return the caramelized onions to the skillet, combining them with the beef and kimchi. Cook for another 2 minutes to warm through.
Serve the beef mixture over bowls of warm steamed rice, garnished with sliced green onions. Adjust salt to taste.
