Rub the pork shoulder with salt and aji seasoning, ensuring it's evenly coated.
Place the pork in a roasting pan and cover it tightly with aluminum foil.
Roast the pork in the preheated oven for about 6 hours, or until it's fork-tender.
Once done, remove the pork from the oven and let it rest for 15 minutes before shredding.
While the pork is resting, steam or sauté the cabbage until tender.
Serve shredded pork over rice and top with steamed cabbage.
