Preheat the air fryer to 200°C.
Place the chicken breasts in a bowl. Season with salt and pepper.
In a separate bowl, mix honey and mustard until combined.
Coat the chicken breasts in the honey mustard mixture, reserving a little for later.
Place chicken in the air fryer basket and air fry for 15 minutes, flipping halfway.
Meanwhile, peel and dice the sweet potatoes. Boil in a pot of salted water for 15 minutes until tender.
Drain the sweet potatoes and mash with butter and a pinch of salt until smooth. Set aside.
Heat olive oil in a pan over medium heat. Add green beans and sauté for 5-7 minutes until tender-crisp.
Once the chicken is cooked, brush with the reserved honey mustard mixture.
Assemble meal prep bowls with sweet potato mash, sliced chicken, and sautéed green beans.
