In a bowl, whisk together the honey, lime juice, and olive oil to make the marinade.
Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over the chicken. Let it marinate for at least 15 minutes.
While the chicken is marinating, prepare the vegetables by cutting them into bite-sized pieces.
Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 75 degrees Celsius.
During the last 5 minutes of grilling, add the vegetables to the grill and cook until they are tender and slightly charred.
Once cooked, remove the chicken and vegetables from the grill and let them rest for a few minutes before serving.
