In a bowl, combine soy sauce, sake, mirin, sesame oil, and sugar to create the marinade. Add thinly sliced yakiniku beef and marinate for 15 minutes.
While the beef marinates, rinse sushi rice under cold water until the water runs clear. Cook rice in a rice cooker or on the stove according to package instructions.
In a small pan over low heat, toast sesame seeds until golden brown and aromatic, about 3 to 5 minutes. Remove from heat and set aside.
Once rice is cooked, gently fold in toasted sesame seeds for added nuttiness and aroma.
Heat a large skillet over medium-high heat. Add the marinated beef along with the marinade. Cook until the beef is browned and cooked through, about 5 to 7 minutes.
Divide the toasted sesame rice among four bowls. Top each with the cooked beef and any remaining sauce from the pan.
Garnish with sliced green onions and additional sesame seeds if desired. Serve immediately.
