Heat 1 tablespoon of oil in a large pan or wok over high heat.
Add 500 grams of ground turkey to the pan and cook, stirring frequently, until browned and cooked through, about 5 minutes.
Add 1 bell pepper (sliced), 1 cup of broccoli florets, and 1 cup of sliced carrots to the pan and stir-fry for another 5 minutes until the vegetables are crisp-tender.
Stir in 2 tablespoons of soy sauce and 1 teaspoon of garlic powder, mixing well to combine. Cook for an additional 2 minutes.
Serve hot over cooked rice, topped with sliced scallions and sesame seeds if desired.
