A refreshing salad featuring juicy grilled steak, arugula, and tangy blue cheese.

Preheat your grill or stovetop grill pan to high heat.
Season the steak generously with salt and pepper on both sides.
Place the steak on the grill and cook for about 4 to 5 minutes per side for medium-rare, or until it reaches your desired doneness. Remove the steak from the grill and let it rest for 5 minutes.
While the steak is resting, prepare the salad. In a large bowl, combine the arugula, cherry tomatoes, crumbled blue cheese, sliced red onion, and chopped walnuts (if using). Toss the ingredients together gently.
In a small bowl, whisk together the balsamic vinegar and olive oil until well combined. Drizzle the dressing over the salad and toss to coat.
Slice the rested steak against the grain into thin strips.
Divide the salad among plates and top each plate with the sliced steak.
