Heat 2 tablespoons of olive oil in a large pot over medium heat.
Add 500 g of lamb, cut into bite-sized pieces, and brown on all sides for about 5 minutes.
Stir in 2 cloves of minced garlic and 1 teaspoon of dried oregano, cooking until fragrant, about 1 minute.
Add 1 liter of water, the juice of 1 lemon, and 200 g of orzo. Bring to a boil.
Reduce heat to low and simmer, covered, for about 15 minutes or until the orzo is cooked and the liquid is absorbed.
Season with salt and pepper to taste before serving.
