A delicious Chinese-American stir-fry featuring chicken in a sweet-savory soy glaze with garlic and ginger, served over rice.

Cut the chicken breast into bite-sized pieces and season with salt and black pepper.
In a large skillet or wok, heat 2 tablespoons of oil over high heat. Add the chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
In the same pan, add 1 tablespoon of oil, minced garlic, and grated ginger. Stir-fry for about 30 seconds until fragrant, then add 0.25 cup of soy sauce, 0.25 cup of sugar, and 1 tablespoon of vinegar. Bring to a simmer.
Return the chicken to the pan, tossing to coat in the sauce. Cook for an additional 2-3 minutes until the sauce is slightly thickened.
Serve the General Tso's Chicken over steamed rice, garnished with chopped scallions and sesame seeds if desired.
