In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside, leaving the rendered fat in the skillet.
Add the ground beef to the skillet and cook over medium heat, breaking it up with a spoon, until browned. Season with a pinch of salt and pepper, then set aside.
In the same skillet, add the beef tallow. Once melted, scramble the eggs in the tallow until just set.
Lay out the beef sheets on a clean surface. Spread a portion of scrambled eggs, bacon, and seasoned ground beef onto each sheet.
Roll the beef sheets tightly around the filling to form a burrito shape. Ensure ends are tucked in to secure the filling.
Wrap each burrito in aluminum foil and place in the freezer for up to 3 months.
To reheat, remove foil and microwave for 2 minutes or bake in the oven at 175 °C for 15 minutes, until heated through.
