In a large mixing bowl, combine sugar, salt, black pepper, and garlic.
Add pork slices to the bowl and mix well, ensuring each slice is evenly coated.
Cover the bowl with plastic wrap and refrigerate to marinate for at least 24 hours.
Heat a non-stick pan over medium heat.
Add marinated pork slices to the pan along with water. Cover and cook until water evaporates, about 15 minutes.
Uncover and let the pork caramelize, flipping occasionally, until golden brown on both sides, about 10 minutes.
Serve hot with steamed rice.
