Boil 500 g of pork belly in a pot with water until tender, about 20 minutes. Let it cool and then dice into small pieces.
In a frying pan, heat 2 tablespoons of oil over medium heat and fry the diced pork belly until crispy and golden brown. Remove and set aside.
In the same pan, sauté 1 medium chopped onion and 2 cloves of minced garlic until fragrant.
Add the crispy pork belly back into the pan along with 2 pieces of chopped chili peppers, and stir well.
Season with 1 tablespoon of soy sauce, 1 tablespoon of lime juice, and 0.5 teaspoon of black pepper. Mix everything together.
Transfer the mixture to a sizzling plate and serve immediately.
