Boil water in a large pot, cook the pancit canton noodles according to package instructions. Drain and set aside.
Heat oil in a large pan over medium heat. Add garlic, onion, and cook until onion is translucent.
Add chicken strips, season with salt and pepper, and cook until browned and cooked through.
Add shrimp to the pan, cooking until they turn pink and are cooked through.
Add julienned carrots, sliced cabbage, and sliced bell pepper to the pan. Stir-fry for about 3 minutes until vegetables are tender-crisp.
Add the cooked pancit canton noodles to the pan, tossing to combine with the chicken, shrimp, and vegetables.
Pour soy sauce and oyster sauce over the mixture, tossing well to coat everything evenly.
Serve hot, garnished with chopped green onions and lemon wedges on the side.
