A comforting Indian dish made with lentils, infused with spices and served with a side of rice or bread.

Rinse the black lentils under cold water until the water runs clear.
In a pot, combine the rinsed lentils with 1 liter of water and bring to a boil. Reduce heat and simmer for 20 minutes until lentils are tender.
In a separate pan, heat 2 tablespoons of oil over medium heat. Add 1 teaspoon of cumin seeds and let them sizzle for a few seconds.
Add 1 chopped onion and sauté until golden brown. Then add 2 cloves of minced garlic and 1 tablespoon of grated ginger, cooking for another minute.
Stir in 1 teaspoon of turmeric, 1 teaspoon of coriander, and 1 teaspoon of garam masala. Cook for 1 minute until fragrant.
Add the cooked lentils to the spice mixture and stir well. Adjust the consistency with water as needed. Season with 0.5 teaspoons of salt and simmer for 5 minutes.
Garnish with chopped cilantro before serving.
