A refreshing salad with spiralized zucchini and sliced cucumber, lightly cooked and tossed with a simple dressing.

Spiralize 2 medium zucchinis and lightly slice 1 large cucumber.
Heat 1 tablespoon of olive oil in a pan over medium heat. Add the spiralized zucchini and cook for 2-3 minutes until slightly tender. Remove from heat and let cool.
In a large bowl, combine the cooked zucchini and sliced cucumber. Add 2 tablespoons of olive oil, 1 tablespoon of lemon juice, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Toss to combine.
Chop 0.25 cup of fresh mint leaves and 2 green parts of scallions. Add to the salad and toss gently.
Optional: Top with 0.5 cup of crumbled feta cheese or shaved parmesan before serving.
