Preheat the oven to 200 degrees Celsius.
Press the tofu to remove excess moisture, then cut it into cubes. Toss the tofu with olive oil, salt, and a sprinkle of chili powder.
Spread the tofu cubes on a baking sheet and roast in the oven for 25 minutes, flipping halfway through until crispy.
While the tofu is cooking, prepare the grains according to package instructions. Set aside.
Chop the vegetables into bite-sized pieces. In a large bowl, combine cooked grains, roasted tofu, and fresh vegetables.
