Bring a large pot of salted water to a boil and cook the pasta until al dente, according to package instructions.
While the pasta is cooking, in a large bowl, combine cottage cheese, grated Parmesan cheese, and black pepper.
Reserve 1 cup of pasta water, then drain the pasta.
Add the hot pasta to the bowl with cottage cheese and cheese mixture, tossing to combine. Gradually add reserved pasta water until a creamy sauce forms, coating the pasta well.
Adjust seasoning with additional black pepper and salt to taste.
Serve immediately, garnished with more Parmesan cheese if desired.
