Preheat your oven to 200°C (392°F).
In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until soft.
Add ground beef to the skillet and cook until browned. Season with salt, black pepper, and thyme.
Mix in chopped carrots and peas. Cook for another 5 minutes.
Stir in beef broth and tomato paste, bring to a simmer, and cook for 10 minutes until the mixture thickens slightly.
Meanwhile, in a large pot, boil peeled potatoes in salted water until tender, then drain.
Mash the potatoes with butter and milk until smooth. Stir in collagen powder, making sure it's well incorporated.
Spread the beef mixture evenly in a baking dish, and top with the mashed potatoes.
Bake in the preheated oven for 25 minutes, or until the top is golden brown.
