Turn on the Ninja Foodi and select the 'Sauté' function. Add coconut oil and allow it to melt.
Add the diced onion, minced garlic, grated ginger, and sliced lemongrass to the pot. Sauté for 3 to 4 minutes until the onion is translucent and fragrant.
Add turmeric and stir to coat the aromatic ingredients evenly. Sauté for another 1 minute.
Pour in the coconut milk and fish sauce, stirring to combine with the spices and aromatics.
Place the white fish fillets gently into the coconut milk mixture, ensuring they are submerged.
Cancel the 'Sauté' function. Close the lid, ensuring it is sealed properly, and select the 'Pressure Cook' function. Set the timer for 5 minutes.
Once the cooking time is complete, carefully perform a quick release of pressure.
Open the lid and gently stir in lime juice and season with salt to taste.
Serve the fish curry with steamed vegetables or cauliflower rice for a complete AIP-compliant meal.
