In a bowl, combine chicken breast with olive oil, lemon juice, oregano, salt, and black pepper. Let marinate for at least 15 minutes.
Heat a grill pan over medium heat. Cook the marinated chicken for 6-8 minutes per side or until fully cooked. Remove from heat and let rest before slicing.
In a large bowl, combine arugula, chopped bell pepper, and diced cucumber. Toss with remaining olive oil and lemon juice.
Slice the cooked chicken and place it on top of the salad. Drizzle with additional olive oil if desired and serve immediately.
