In a bowl, combine the Irish whiskey, honey, soy sauce, garlic, and lemon juice to create the marinade.
Cut the chicken breast into 2.5 cm cubes and add to the marinade. Toss to ensure the chicken is well coated. Marinate in the refrigerator for at least 30 minutes or up to 2 hours for maximum flavor.
Soak wooden skewers in water for 10 minutes to prevent burning during grilling.
In a small saucepan, combine the Irish whiskey and brown sugar. Heat over medium heat, stirring occasionally, until the sugar dissolves. Reduce heat to low and let it simmer until the mixture thickens to a glaze consistency, about 10 minutes.
Preheat the grill to medium-high heat.
Thread the marinated chicken pieces onto the skewers.
Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Brush the skewers with the prepared whiskey glaze during the last few minutes of grilling.
