In a large bowl, combine ground chicken, 0.5 teaspoon of chili powder, 0.5 teaspoon of black pepper, and salt to taste. Mix until well combined.
Form the mixture into 4 equal patties and set aside.
Heat a skillet over medium heat and add 1 tablespoon of butter. Once melted, add the chicken patties and cook for about 5-7 minutes on each side, or until fully cooked and golden brown.
While the patties are cooking, place the tortillas in another skillet or on a griddle. Cook each side for about 1-2 minutes until crispy and warm.
Once the patties are cooked, place a slice of cheddar cheese on each patty and cover the skillet for 1-2 minutes to melt the cheese.
Toast the burger buns in a separate skillet with a little butter until golden brown.
Assemble the burgers by placing a tortilla on the bottom bun, adding the cheesy chicken patty, and topping with your choice of toppings such as arugula, diced tomatoes, or avocado. Add the top bun and serve immediately.
