Cook the Asian noodles according to package instructions until al dente, then drain and set aside.
In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Add the chicken breast and cook until browned and cooked through, about 5-7 minutes.
Add the cooked noodles, fish sauce, lime juice, tamarind paste, and sugar to the skillet. Toss to combine and cook for an additional 2-3 minutes until everything is heated through.
