Cook the Asian noodles according to package instructions, then drain and set aside.
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add minced garlic and grated ginger, and stir-fry for about 30 seconds until fragrant.
Add sliced chicken breast to the skillet and cook until no longer pink, about 5-7 minutes.
Add sliced bell pepper and broccoli to the skillet and stir-fry for another 3-4 minutes until vegetables are tender-crisp.
Stir in cooked noodles and add soy sauce, stirring everything together until well combined and heated through.
