Preheat a deep skillet or frying pan with oil over medium heat.
In a bowl, mix together 0.5 cup of soy sauce, 0.25 cup of mirin, and 1 teaspoon of grated ginger for the dipping sauce.
Pound the chicken breasts to an even thickness, then season with salt and pepper.
Dredge each chicken breast in flour, dip in beaten egg, then coat with panko breadcrumbs.
