Slice the chicken breast into thin strips and season with salt and pepper.
Heat a large skillet or wok over high heat and add 1 tablespoon of cooking oil.
Add the chicken strips to the hot skillet and stir-fry until cooked through, about 5 minutes.
Remove the chicken from the skillet and set aside. In the same skillet, add another tablespoon of oil if needed.
Add the green beans and stir-fry for about 3 minutes until bright green and tender-crisp.
Add minced garlic and stir for 30 seconds until fragrant.
Return the chicken to the skillet, add soy sauce, and mix well to combine.
Serve over steamed rice, garnished with chopped scallions and sesame seeds.
