Preheat the oven to 180 degrees Celsius.
In a large bowl, mix the cooked chicken, 0.5 cups of enchilada sauce, and 0.25 cups of cheddar cheese until well combined.
Spread 0.5 cups of enchilada sauce on the bottom of a baking dish. Layer half of the chicken mixture, followed by half of the remaining enchilada sauce and half of the remaining cheese. Repeat the layers.
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 5 minutes or until the cheese is golden and bubbly.
Let cool for a few minutes before serving.
