Cook the pasta according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat 1 tablespoon of butter over medium heat. Season the chicken breast with Cajun seasoning and add to the skillet. Cook for about 6-7 minutes until fully cooked. Remove the chicken and slice it into strips.
In the same skillet, add another tablespoon of butter, then add the canned diced tomatoes and stir. Reduce heat and add the cream, mixing well. Season with additional Cajun seasoning and black pepper to taste, simmer for 5 minutes.
Add the cooked pasta and sliced chicken to the skillet, tossing to coat in the sauce. Cook for an additional 2-3 minutes until heated through.
Serve hot, garnished with chopped cilantro and grated cheese.
