In a large bowl, combine ground chicken, crushed pork rinds, Parmesan cheese, beaten egg, and milk. Mix until well combined.
Form the mixture into small meatballs, about 1 inch in diameter.
Preheat the air fryer to 180 degrees Celsius.
Place the meatballs in the air fryer basket in a single layer. Cook for 12-15 minutes, shaking the basket halfway through, until the meatballs are golden and cooked through.
While the meatballs are cooking, prepare the buffalo sauce. In a small saucepan, melt butter over low heat. Stir in hot sauce and blue cheese until the cheese is melted and the sauce is smooth.
Once the meatballs are cooked, transfer them to a large bowl, pour the buffalo sauce over them, and toss to coat evenly.
Serve immediately, garnished with additional blue cheese if desired.
