Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
Slice the bell peppers in half lengthwise and remove the seeds and membranes. Place them cut side up in a baking dish.
In a large bowl, mix the shredded chicken breast with buffalo sauce, cream cheese, and half of the blue cheese crumbles until well combined.
Stuff each bell pepper half with the buffalo chicken mixture.
Bake in the preheated oven for 30 minutes or until the bell peppers are tender.
Remove from the oven and sprinkle the remaining blue cheese crumbles on top. Bake for an additional 5 minutes until the cheese is melted.
Serve hot, garnished with chopped green onions if desired.
