Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Line a baking sheet with parchment paper.
In a large bowl, combine cauliflower florets with olive oil, buffalo sauce, and spices. Toss until the cauliflower is evenly coated.
Spread the cauliflower evenly on the prepared baking sheet and bake for 20-25 minutes, or until crispy and golden brown.
While the cauliflower is baking, warm the tortillas in a skillet over medium heat for about 30 seconds on each side.
Once the cauliflower is done, assemble the tacos by placing a generous amount of buffalo cauliflower on each tortilla. Top with lime juice, cilantro, and salsa. Serve immediately.
