A deliciously grilled salmon dish paired with sweet corn and juicy tomatoes, featuring a smoky-sweet barbecue flavor.

Preheat the grill to medium-high heat.
In a bowl, mix together 0.5 teaspoons of cayenne pepper, 1 teaspoon of black pepper, and 1 teaspoon of salt. Rub this spice blend over the salmon fillets.
Place the salmon fillets on the grill skin-side down. Grill for about 5-7 minutes, then carefully flip and grill for another 5-7 minutes until cooked through.
While the salmon is grilling, in a separate bowl, combine 1 cup of canned diced tomatoes (drained), 1 cup of corn (fresh or canned), and 1 tablespoon of olive oil. Season with salt and pepper to taste.
Once the salmon is nearly done, warm the corn and tomato mixture on the grill for the last 2-3 minutes.
Serve the grilled salmon topped with the corn and tomato mixture.
