Preheat the oven to 200°C (400°F).
Rub the chicken breasts with barbecue sauce, and place them on a baking sheet. Bake for 25 minutes or until fully cooked.
While the chicken is baking, steam the cauliflower until tender, about 10 minutes. Allow to cool slightly.
In a blender, combine the steamed cauliflower, 0.5 cup of cheddar cheese, 0.25 cup of heavy cream, salt, and pepper. Blend until smooth to create the cauliflower mac.
Once the chicken is done, slice it and set aside. Mix the cauliflower mac with the remaining cheddar cheese and put it back in the oven for an additional 5 minutes until bubbly.
To assemble, place a generous scoop of cauliflower mac in each bowl, top with sliced BBQ chicken, and drizzle extra barbecue sauce on top.
