Deliciously tangy balsamic glazed salmon served alongside a refreshing caprese salad.

Preheat the oven to 200°C (390°F). Line a baking sheet with parchment paper.
In a small saucepan, combine balsamic vinegar and honey over medium heat. Stir constantly until the mixture becomes syrupy, about 5 minutes. Remove from heat.
Place salmon fillets on the prepared baking sheet. Brush the fillets with olive oil, then season with salt and pepper.
Brush the balsamic glaze over the salmon fillets generously. Reserve a small amount of glaze for drizzling over the finished dish.
Bake the salmon in the preheated oven for 15 to 20 minutes, or until the salmon flakes easily with a fork.
While the salmon is baking, prepare the caprese salad. Arrange tomato slices, mozzarella slices, and fresh basil leaves on a serving platter.
Drizzle the salad with olive oil and a bit of balsamic reduction. Season with salt and pepper to taste.
Once the salmon is cooked, transfer to serving plates. Drizzle with remaining balsamic glaze and serve alongside the caprese salad.
