Flaky cod fillets with a protein-rich spiced hummus crust served alongside fiber-packed roasted cauliflower. A diabetic-friendly seafood dinner.

Preheat the oven to 200°C (390°F).
Place cauliflower florets on a baking sheet. Drizzle with 1 tablespoon olive oil, season with salt and black pepper, and toss to coat. Roast in the oven for 30 minutes, flipping halfway through.
In a bowl, mix hummus, aji seasoning, and lemon juice to make the spiced hummus crust.
Place cod fillets on a separate baking sheet. Spread the spiced hummus mixture evenly over each fillet.
Bake the cod in the oven for 20 minutes until it's cooked through and flaky.
Serve the baked cod with the roasted cauliflower on the side.
